What is Vegan

Vegan means no animal products, but if a cake is heavily processed, it’s still processed, vegan or not.

The main difference with a vegan cake is the lack of core ingedient eggs, but we’re sorry to tell you… just because a cake has no eggs doesn’t put it in the category of “health food”!

An average cake, whether vegan or not, is a delightful treat meant for occasional enjoyment. Unfortunately, the vegan version doesn’t claim a healthier status. While it may contain less saturated fat, the sugar content remains notably high, and as we’re well aware, sugar and health aren’t the best of friends.

If you opt to bake your own vegan cake, you gain the advantage of knowing precisely what goes into it, reducing the inclusion of any nutritional drawbacks. Should you desire to cut back on sugar, consider substituting refined white sugar with an equivalent amount of granulated sugar. Date sugar is also a viable alternative, but use it sparingly due to its intense sweetness.

Maple syrup presents another option. However, if you incorporate it into your homemade vegan cake, be sure to reduce the liquid components in your recipe to maintain a balanced outcome.

Isn’t Vegan Cake Notoriously Dense?

Vegan cake has earned a reputation for its texture, often considered denser compared to traditional cakes. Typically, the light and fluffy quality in a regular cake is attributed to eggs. It’s logical to assume that without eggs, a vegan cake might turn out dense.

However, it doesn’t have to be that way!

Achieving a light texture in a vegan cake starts with your oven. Ensure it reaches the required temperature at least fifteen minutes before placing your cake mixture inside. This ensures an even temperature throughout the oven, aiding in proper rising.

Preparing your tin in advance is also crucial. If your mixture sits around while you attend to the tins, it may lose air, resulting in a flat cake with less rising and a denser texture.

To enhance a light texture, use an electric whisk to cream margarine and sugar, incorporating air bubbles. When adding flour, precise measurement is key. Excessive flour can lead to a denser cake, but sifting it in high above the mixture helps capture more air, ideal for creating light and fluffy cakes.

Regardless of your method, remember to fold the flour in gently, avoiding overbeating, as excessive beating can develop gluten, contributing to a heavier texture.
